The County of Yolo is currently recruiting to fill a full-time position in the class of Detention Facility Cook at the Yolo County Sheriff's Office.
This candidate selected for this position will be assigned to work in the secure area on the campus of the Sheriff's Office located in Woodland.
Definition Under general supervision, the incumbent will cook and assist in the preparation of meals in a detention facility; assist in the preparation, cooking, and service of food for special diets; oversee inmates that are assisting in the kitchen; write memos and reports; and perform other related duties as required.
This recruitment will be open on a continuous basis until the positions are filled.

Essential Functions The following duties are typical of those performed by the incumbent in this classification; however, other duties may also be required: Prepares and assists in the preparation of vegetables, salads, desserts, meats, and bakery goods.
Assures that the immediate work area and equipment is kept clean and in good working order.
Oversees the work of inmates and assists in clean-up after meals; prepares and cooks food or secures portions of food from the general meal to fill various diet orders.
Prepares special diet orders, including salt-free, liquid, diabetic, fat-free, high vitamin, soft, low residue, bland, high calorie diets.
Selects food items appropriate for a prescribed diet.
Employment Standards Experience: Requires at least one year of experience as a cook involving the preparing and cooking of food and baking in large quantities in an institutional or commercial kitchen.
Knowledge of: The principles, procedures and equipment used in the storage, care, preparation, cooking and dispensing of food in large quantities; sanitation and safety measures used in the operation, cleaning and care of utensils, equipment and work areas.
Ability to: Read, understand and follow recipes to prepare tasty and attractive food for standard and dietary menus; ability to read/write/orally communicate instructions effectively and clearly for the purpose of carrying out assigned duties; judge the quantities of food required and be able to prepare it with a minimum of waste; arrange food preparation sequence in order to serve meals on schedule; properly and safely operate and clean a variety of food preparation equipment and appliances; adjust standard recipes according to varying number of servings; use methods and procedures required in the preparation of large quantities of food; monitor the work of inmate workers preparing food; follow security procedures; maintain accurate inventory and records.
License: Some positions in this classification may require incumbents to possess and maintain a valid California driver's license, Class C or higher, to carry out job related duties.
